Coconut curry chicken soup + Philips Multicooker giveaway!

This countertop appliance does more than just slow cook. It also has settings for Brown/Sauté, Boil/Steam, Rice/Quinoa, Oatmeal, Bake/Roast, Stew/Soup and Yogurt. The versatility of the Multicooker makes it worthy of the minimal storage space I have in my small kitchen, and it has speedily made my old slow cooker redundant. I love being able to brown meat before slow cooking, or make a quick sauce afterward with pan juices, and do it all in the same pot.
 
Before we get to the giveaway, I am sharing a recipe for this gorgeous coconut curry chicken soup. The flavours are fantastic and the soup is thick and satisfying with comforting spices like curry powder, coriander and cumin. Served with a creamy spoonful of plain yogurt and a squeeze of lime juice, it makes for a hearty dinner or leftover lunch.

Coconut Curry Chicken Soup (in the Philips Multicooker)
Makes 3-4 servings

1 tbsp (15 mL) vegetable oil
1 1/2 lb (675 g) chicken thighs, chopped into 1-inch pieces
1 cup (250 mL) diced yellow onion
1 cup (250 mL) diced red bell pepper
2 garlic cloves, minced
1 tsp (5 mL) grated fresh ginger
1 can (540 mL/19 oz) chickpeas, drained and rinsed
1 tbsp (15 mL) brown sugar
1 tbsp (15 mL) + 1 tsp (5 mL) curry powder
1 tsp (5 mL) ground coriander
1 tsp (5 mL) ground cumin
1 tsp (5 mL) salt
1 can (398 mL/14 oz) coconut milk
One chopped green onion, some plain yogurt and lime wedges as garnish (optional)

Add the oil to the Multicooker and set on Brown/Sauté. Add the chicken pieces and sauté 8 to 10 minutes until fully cooked. Stir in the diced onion and bell pepper and cook another 5 minutes to soften the vegetables.

Set the Multicooker on Stew/Soup. Stir in the garlic, ginger, chickpeas, brown sugar, curry powder, coriander, cumin and salt. Pour in the coconut milk and stir to bring it all together. Close the lid and let the Stew/Soup setting finish its 1-hour simmer.

Serve right away or let the automatic Keep Warm function on the Multicooker save it for later. Garnish with chopped green onion, a spoonful of plain yogurt and/or lime wedges if desired.
