Salmon & sun dried tomato alfredo


This is a rich and creamy dish that's perfect for a special occasion. But it's also really quick and simple to make, which is perfect for a weeknight supper. Who doesn't like quick and simple? Crazy people, that's who. I added candied salmon and sun dried tomatoes to the alfredo sauce this time, but you could add other ingredients instead like chicken, asparagus, mushrooms, roasted garlic, artichoke hearts, or just enjoy the sauce as it is.


Here's how I made it:

4 cups dry pasta
1 cup heavy cream (35% milk fat whipping cream)
1 cup water
1 cup grated parmesan cheese
1 garlic clove, crushed
1 tsp chicken bouillon powder
1 tbsp all-purpose flour
1 tbsp olive oil
2 candied salmon nuggets, flaked apart (about 1/2 cup)
1/4 cup sun dried tomatoes, julienned

I started the pasta boiling in a large pot of salted water. Meantime, I brought the cream and water to a slow boil over medium/high heat in a medium saucepan. I reduced the heat to medium low and added the parmesan, garlic, and bouillon. In a small bowl, I stirred together the flour and olive oil and added the mixture to the sauce. I brought the sauce back up to a slow boil, added the salmon and sun dried tomatoes, and allowed the sauce to thicken for a minute or two to finish it.

When the pasta was cooked until al dente, I drained the pasta and returned it to the large pot.  I poured the sauce on top of the pasta and stirred it all up to combine. I served it in pasta bowls and topped it with basil ribbons.


This was not eaten by my 3-year-old, but I'm okay with that. Sometimes mom and dad need to eat the meals THEY want and this was one of those times. Besides, we'll all be eating the same thing tonight. Hot dogs. Yup, Mr. Feedbag got a Wii for Father's Day and we're celebrating with a Wii and Wieners party at home.
