Dilled Noodle Salad With Creamy Dijon Dressing (GF)


I'm taking part in the Catelli Gluten Free Pastabilities Challenge to create a delicious recipe using Catelli Gluten Free Pasta. May is Celiac month, so naturally it is a good time for some fresh and fun gluten free recipes. This flavourful chilled noodle salad I came up with is made with tender gluten free pasta, red pepper, crunchy dill pickles and fresh dill, tossed in a zingy sour cream Dijon dressing.

I have a few friends who have Celiac Disease, including two in my running group, so I'll be sharing this recipe with them. To avoid all traces of gluten, be sure to use a gluten free Dijon mustard and pickles made with non-gluten containing vinegar. Most commercial brand pickles are gluten free, but people with Celiac Disease know to avoid ones that include malt vinegar which is made from barley. Also, be sure to use a gluten free sour cream in the dressing. When in doubt, grab a full fat sour cream as some of the light or fat-free sour creams contain gluten as a thickener.

Dilled Noodle Salad With Creamy Dijon Dressing
Serves 4-6

1 box (340 g) Catelli Gluten Free Fusilli
3/4 cup (175 mL) gluten free sour cream
3 tbsp (50 mL) gluten free Dijon mustard
2 tbsp (30 mL) apple cider vinegar
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) black pepper
1 cup (250 mL) thinly sliced red pepper
1/2 cup (125 mL) diced gluten free dill pickles
1/2 cup (125 mL) chopped fresh dill
3 green onions, finely chopped
2 hard-boiled eggs, chilled, peeled and sliced

In a large pot of boiling water, cook the pasta according to package instructions. Drain. Rinse under cool water and set aside.

In a large mixing bowl, whisk together the sour cream, Dijon, vinegar, salt and pepper. Add the red pepper, pickles, dill, green onions, eggs and pasta. Toss to coat.

Chill until served.
