Mojito-soaked pork chops


Summertime is mojito time, right? And grilled pork chops are tasty, right? In case you've already had a few mojitos as you're reading this, the answer to both those questions is YES! In this recipe I've combined the refreshing tastes of fresh mint, lime juice, white rum and a touch of sugar, and poured the mixture over my pork chops to get drunk (uh, marinate).

We get loads of fresh mint growing along the fence in our backyard each summer. Of course mint is heavenly in a cold and fizzy mojito (Mr. Feedbag makes a mean one), but it also pairs nicely with meat. Beef, chicken or pork - any of them would work nicely with this mojito marinade.

Here's how I made it:

2 1/2 lbs pork loin chops (1-inch thick)
1/4 cup fresh mint leaves, roughly chopped + more leaves for garnish
1/4 cup white rum
juice of 1 lime + juice of half a lime for garnish
1 tbsp granulated white sugar

The pork chops were laid in a dish just big enough to fit them in a single layer. I combined the 1/4 cup of mint leaves, rum, juice of 1 lime, and sugar and stirred to dissolve the sugar. I poured the mixture over the pork chops, then covered with plastic wrap and left them in the fridge to marinate for several hours (overnight would be even yummier). They went on the grill for 5 to 7 minutes a side until cooked through. To serve, I garnished with more mint leaves and drizzled with the juice of half a lime.
