Here's something for the eggnog lovers! These golden pancakes are made with rich, sweet eggnog and an extra sprinkling of eggnog's finest note - nutmeg. A stack of these gets really dressed up when it's drenched in this festive nog maple syrup. Mmm, bring on Christmas morning!
Here's how I made them:
1 cup all-purpose flour
1 tbsp granulated white sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp ground nutmeg
1 egg
1 cup egg nog
2 tbsp butter, melted
In a large mixing bowl, I whisked together the flour, sugar, baking powder, baking soda, salt, and nutmeg. To the dry ingredients, I added the egg, eggnog, and melted butter and stirred to combine.
I cooked the pancakes in a non-stick pan over medium to medium-low heat until golden on each side (on my stove dial, the sweet spot for pancakes is 4).

ReplyDeleteIt makes about 8 medium-sized pancakes. If your boy needs more, it is easily doubled :)
ReplyDeleteWow these look just amazing Amy! So seasonal, and I love the use of eggnog - I find drinking it straight has become a bit rich for me, but I could definitely use it in cooking! Yum!

ReplyDeleteWe have lots of egg nog lovers in our family! I discovered silk-nog (soy egg nog) last year and fell in love. It is not quite as rich but has all the yummy flavor and creamy texture! Normally we just drink it straight from the glass (OK - carton) but I like this pancake recipe! I am all for breakfast ideas that can be made ahead of time and put in the freezer. I may just do that tomorrow morning so we can enjoy these for a few mornings this week!
