Speedy cheese & mac


Homemade macaroni and cheese as fast as the stuff that comes out of a box? Yes I can! This recipe puts an ooey gooey family favourite on the table in the same amount of time that it takes to boil pasta. By the time the noodles are cooked, the sauce is made and ready to be stirred in.

With only six ingredients, this recipe is easy peasy mac and cheesy. Or cheese and mac in this case because cheese is definitely the star of the show here!


Here's how I made it:

4 cups dry macaroni pasta
2 tbsp olive oil
2 tbsp all-purpose flour
1 1/2 cups whole milk
1 1/2 cups old cheddar, grated
1/3 cup cream cheese

I started by adding the pasta to a large pot of boiling salted water. Meantime, I mixed the olive oil and flour in a medium saucepan to create a paste. With the heat on medium, I added the milk to the saucepan and brought it up to a simmer, stirring often, being careful not to let it boil (to avoid the milk separating). Once bubbles just started to break the surface, I removed the saucepan from the heat and stirred in the cheddar and cream cheese. When the pasta was done cooking (about 7 minutes total), I drained it and stirred in the sauce. Voila!

Easy. Tasty. Fast.


My 3-year-old loves the boxed stuff. I just never feel great about feeding it to him. This meal takes no longer to make and, served with some veggie sticks, it's a meal I can feel proud to serve my family.
