Speedy cheese & mac

Homemade macaroni and cheese as fast as the stuff that comes out of a box? Yes I can! This recipe puts an ooey gooey family favourite on the table in the same amount of time that it takes to boil pasta. By the time the noodles are cooked, the sauce is made and ready to be stirred in.

With only six ingredients, this recipe is easy peasy mac and cheesy. Or cheese and mac in this case because cheese is definitely the star of the show here!

Here's how I made it:

4 cups dry macaroni pasta
2 tbsp olive oil
2 tbsp all-purpose flour
1 1/2 cups whole milk
1 1/2 cups old cheddar, grated
1/3 cup cream cheese

I started by adding the pasta to a large pot of boiling salted water. Meantime, I mixed the olive oil and flour in a medium saucepan to create a paste. With the heat on medium, I added the milk to the saucepan and brought it up to a simmer, stirring often, being careful not to let it boil (to avoid the milk separating). Once bubbles just started to break the surface, I removed the saucepan from the heat and stirred in the cheddar and cream cheese. When the pasta was done cooking (about 7 minutes total), I drained it and stirred in the sauce. Voila!

Easy. Tasty. Fast.

My 3-year-old loves the boxed stuff. I just never feel great about feeding it to him. This meal takes no longer to make and, served with some veggie sticks, it's a meal I can feel proud to serve my family.

Do your kids go crazy for boxed mac and cheese? Do they prefer your homemade mac and cheese? Do you have boxed mac and cheese guilt like me?! Leave a comment and tell me all about it.

  1. nice, I use butter in my roux rather than oil but I suspect the same result! I also like to add a touch of worchestershire and dry mustard :)
    great post

  2. Amy! This is the same kind of thing Billy loved me to make too!! I fried chopped onions and added a bit of chicken bouillion, plus garlic - to butter too!! If you're really into rich 'n creamy, use evaporated milk - but I'm in total agreement with the old cheddar thing!! Cheers!
eta - not sure why I come up as "anonymous" but oh well! lol

  3. Looks great! Would love to make this for my bf and myself sometimes. I'm certainly learning how to become a better cook lol.

  4. So making this for the kidlets except I'm gonna swap for Whole Wheat Pasta :) Gotta get it in em where I can :P

  5. I make old school baked mac n cheese. Takes a long time but family freakin' loves it.

  6. Haha! I always have to put a smile on the mac and cheese (homemade, of course) that I do for my kiddos.

  7. wow! it's looking very yummy and delicious. I had read the recipe and must says that, it's very easy to made.
