Bacon and onion biscuits


Anything with bacon in it is a winner in our home. These bacon and onion biscuits are buttery, bacony (ya it's a word), and pretty much perfect with a comforting bowl of soup.

Here's how I made them:

4 slices of bacon, chopped into half-inch pieces
1/3 cup onion, finely diced
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp granulated white sugar
1/2 cup cold butter, cut into cubes
3/4 cup milk (I use whole milk)

While my oven preheated to 400 degrees (F), I cooked the bacon and onion in a small saucepan over medium heat until the bacon was crispy. Then I set it aside to cool a little while I prepared the dough.


In a large mixing bowl, I stirred together the flour, baking powder, salt and sugar. Using a hand pastry blender, I cut the butter into the dry ingredients until it was uniformly crumbly. Next, I added the milk and the bacon and onion mixture and stirred just to bring it all together. 

I turned out the dough on my floured countertop and kneaded it a few times just to bring it together. Using my floured rolling pin, I rolled the dough to a half-inch thickness (or so) and cut my biscuits using a floured cookie/biscuit cutter (I contemplated using the rim of a cup, but went with a small cutter instead).


My biscuits went onto a parchment-lined baking sheet and I popped them in the oven for 15 minutes until golden and flaky.


Bacony. Oniony. Good.
