I'd say this chicken falls in the category of lip smackin' hot damn good! The sauce starts with a tomato base and grows from there, getting its sweetness from brown sugar and honey, and a little kick from chili powder and cayenne. Yeehaw! Mama's got her cowgirl apron on now, son!
Here's how I made it:
1/3 cup tomato sauce
2 tbsp tomato paste
1/3 cup brown sugar
1/4 cup malt vinegar
2 tbsp honey
2 tsp chili powder
1 tsp ground mustard
1 tsp onion powder
1 tsp garlic powder
1/4 tsp ground cayenne pepper
1/4 tsp salt
1/4 tsp ground cinnamon
2 1/2 lbs chicken pieces (I used skinless thighs)
I stirred together all the ingredients, except the chicken, in a small mixing bowl. I set aside half the sauce for later, and poured the rest over the chicken pieces and gave them a toss to get 'em all good and saucy.
The chicken went on the BBQ for about 8 minutes a side until cooked through. While Mr. Feedbag manned the grill, I warmed the remaining sauce in a large saucepan then removed it from the heat. The cooked chicken was added to the saucepan and tossed once more to get each piece even more saucy. Yum!
There are a lot of ingredients in this recipe, which isn't something I usually like to do as a busy family cook. But the extra trips to the drawer for measuring spoons and fiddling with spice jar lids is totally worth it. Try this one. You'll like it.

ReplyDeleteTried it on ribs last night... another hit! I boiled the ribs in salted water first, then put a little of the broth in the roasting pan (just to keep it from burning), basted the BBQ sauce onto the ribs and slow roasted them for an hour. Superb!

I've got company coming and thought I could make the sauce up before hand and stick it in the fridge for a couple of days, then just pull it out when I'm ready to grill. . . . . . I try to make ahead as much as possible as it makes me look like a hostess who has it all together. lol. In reality, I'm usually just a good planner!
