Strawberry lemonade


It's that time of year when strawberries are cheap and plentiful in most grocery stores! Oh, how I love seeing those large containers of red berries on display with that hard-to-believe price sign above. My reaction is always the same - I'll take four!

When we had a group of friends over for a backyard kiddie pool party on Friday, I wanted to offer something special to drink, something yummy for both kids and moms alike. So my 3-year-old and I got to work the morning of the party on making a large pitcher of strawberry lemonade.

Here's how we made it:

1 cup strawberries, hulled and chopped
1 cup lemon juice (takes about 6 lemons)
1 cup granulated white sugar
9 cups cold water, divided

After chopping the strawberries and juicing the lemons (with my kiddo standing on a chair, apron and smile on) we combined the strawberries, sugar, and 1 cup of water in a medium saucepan.


I brought the mixture to a boil, then reduced the heat to medium/low and allowed it to simmer for 10 minutes, dissolving the sugar and softening the strawberries. The mixture was strained through a fine mesh sieve into a heat proof bowl to cool.

Once the strawberry syrup had cooled a bit, we mixed it in our large pitcher with the lemon juice and the remaining 8 cups of water, and gave it a stir. It cooled in the fridge for a couple hours before the party and it went down well with our friends.
