Chocolate mint cookie mounds


Sometimes messing around with ingredients in the kitchen works out. Sometimes it doesn't. Then there are times when the kitchen gods shine down on my mixing bowls resulting in epic awesomeness. That's what happened with these uber chocolatey, mega minty, chewy chocolate mint cookie mounds.


Here's how I made them:

1 cup unsalted butter, softened
1 cup brown sugar, packed
1 egg
2 tsp peppermint extract
1 2/3 cups all-purpose flour
1/2 cup cocoa powder
1 tsp baking soda
1 tsp salt
1 300g bag mint chocolate chips (approx. 1 1/2 cups)

While the oven preheated to 375 degrees (F), I creamed the butter and the brown sugar in my stand mixer (you could do all this by hand too). Next, I added the egg and peppermint extract and mixed thoroughly. In a medium mixing bowl, I combined the flour, cocoa powder, baking soda, and salt. The dry ingredients were added to the other mixture gradually and mixed thoroughly. Then I mixed in the chocolate chips to finish the dough.

The dough was dropped by heaping tablespoons onto a parchment lined cookie sheet, about 2 inches apart. They baked for 10 minutes, cooled on the pan for a few minutes then transferred to a wire rack to cool completely.


A little of this and a little of that can make a whole lot of mmmmm. Now we're off to a play date in the park to share these with our friends!
