Grapefruit coconut squares


I was at my favourite food market recently when I spotted some lovely looking grapefruit. Standing there, with one of those hefty beauties in the palm of my hand, I knew pretty quickly what I wanted to do with them - lemon squares, but with grapefruit instead! I just love the sour pucker of this citrus fruit, and I decided take these squares into full-on sunshine mode by doing a buttery coconut base.


Here's how I made them:

1 cup all-purpose flour
1/2 cup butter, cut into cubes
1/4 cup icing sugar
3 tbsp shredded coconut
2 eggs
1 cup granulated sugar
4 tbsp grapefruit juice

I set the oven to 350 degrees (F). Then I mixed the first four ingredients in a medium bowl using a hand pastry blender (you can also use your hands). The mixture was pressed into a 9x9 baking dish and baked for 20 minutes. When it was done baking, I whisked together the last three ingredients and poured the mixture over the crust. Back it went in the oven for 25 minutes. I allowed the squares to cool completely before cutting them and giving them a dainty dusting of icing sugar.


Talk about an easy recipe. And such pretty little sunshiney things they are!
