These pretty little numbers are, to me, everything a peanut butter cookie should be - sweet and salty with a lightly crisp edge and a soft chewy centre. No traditional peanut butter cookie fork marks here. Instead, they get a shimmery coating from a quick roll in a bowl of sugar before going in the oven. With a glass of cold milk, they're the perfect little snack for an afternoon sweet tooth.
Here's how I made them:
makes about 30 cookies
1 cup smooth peanut butter
1 cup + 1/3 cup granulated white sugar (divided)
2 eggs
1 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
While the oven preheated to 375 degrees (F), I combined the peanut butter, 1 cup of sugar, eggs and vanilla in a large mixing bowl and mixed thoroughly. In a separate mixing bowl, I stirred together the flour, baking soda and salt. The dry ingredients were added to the other ingredients and mixed well to form the dough. The remaining 1/3 cup sugar was added to a small dish. Using my hands, I formed the dough into balls the size of ping pong balls and rolled them in the sugar before placing them two inches apart on a parchment-lined cookie sheet. They baked for 10 minutes, then cooled on a wire rack.
Chocolate chips are nice and all, but a really good peanut butter cookie is my all-time favourite cookie. Especially that chewy centre.
What's your all-time favourite cookie?

I bet these would be good with a few chocolate chips in them too!!
ReplyDeleteHello!
ReplyDeleteDid you press them down before baking them? Or did they melt and crack on their own?
~L
I just left them in sugar-coated ball form and they spread while baking.

ReplyDeleteThe last time I baked peanut butter cookies was when I was working on my second degree. That was too long ago to count and now I am so tempted and inspired by these pictures.
DeleteI also have a passion for food and photographing it.

Thanks for adding to my to-do list.
I accidentally removed my first comment, I was trying to add that I wish I could get over to Victoria this summer for food and photography. I love this blog.
ReplyDeleteThis looks and sounds delicious - will have to try them some time. Thanks for sharing with us:)
ReplyDeleteI made these last night - they might be my new favorite pb cookie recipe. :)
ReplyDeleteNow this would be a hit in my household! I will definitely try this out!
ReplyDeleteCome check out recipe for simple risotto here:

just made these, they are on my cooling rack now. But they stayed pretty balled up. I wil have to try again and smoosh them a little before cooking!
ReplyDeleteThanks for the recipe!
Thats what I'm worried about is leaving them in a ball will they fall?
Deleteholy smokes these are good. i was a bit skeptical about the lack of butter butter, but wow. best ever, for real.
ReplyDeleteWoohoo! I like to hear that. For real. Glad you like them :)
DeleteMade these today!! They are GOOD!
ReplyDeletewow they are in the oven cant wait !!!!! :)
ReplyDeleteSo... just wondering if the type of pb makes a difference. Did you use Jif? I used creamy all natural pb and the dough was so crumbly and dry that I tried adding a little butter just to make it manageable. It still was crumbly and hard to get into balls. I thought for sure I had missed an ingredient or something, but reading back through the recipe I'm sure I didn't. They came out tasting good, but I'm just curious if anyone else had this experience? Oh, I also ended up mashing down the second batch in the oven b/c the first came out still pretty balled up. Also, I made them ping pong ball sized and only got about 20 cookies.
ReplyDeleteYou may have added a tad bit extra flour for the humidity and air pressure. Sounds crazy I know. But you have to add in as you go for texture wise. The warmer the dough, the more it will fall and spread from balls. If you chilled it, or it was cool in your kitchen, they wouldnt have fallen as much.
DeleteHope this helped :D
I had the some problem for the same reason (natural PB) but I added a little bit of half/half to make it come together. Cookies turned out great!!!
DeleteAwesome recipe. It was very easy. I didn't even burn any of them, which seems to be required with me and cookies. Thanks for sharing!
ReplyDeleteIn the oven now! Can't wait! I always have JIF in the house so thats what i used. I was a bit nervous when forming the balls about how crumbly the doe was. We'll see.. :)
ReplyDeleteoh bugger! Just realized, only used one egg by mistake.. They turned out fine. Next time I' ll pay closer attention to ingredients.
ReplyDeletecan i use crunchy peanut butter or will that change things alot ?
ReplyDeleteSure, give it a try. If it were me, I'd add an extra tablespoon or two of peanut butter to make up for the added solids/reduced liquid of crunchy peanut butter.
DeleteHappy baking!
I baked them and sadly the dough came out oddly and baking them... Well didn't go so well. =(
ReplyDeleteMy daughters and I just made this cookies. We substituted Arrowhead Mills Gluten Free All Purpose Flour for the regular all purpose flour and we used Smart Balance chunky peanut butter. Added an extra tablespoon of peanut butter as recommended in comments. After the balls were shaped we flattened the tops slightly with a fork. They turned out awesome. Can't even tell that our version was gluten free. Thanks for the recipe!
ReplyDeleteWay to go! I really appreciate you sharing how you experimented with the recipe. Glad you liked them :)
DeleteSo good, thank you!
ReplyDeleteWe haven't tasted them yet but they look and smell delicious. G(age 10)
ReplyDeleteThanks for sharing your thoughts on baking these cookies, G! I hope they tasted as good as they smelled. Keep on baking!
DeleteI have been trying to find good dairy free cookie recipes that aren't gluten, egg and everything else free. These were so simple (took me about 15 minutes to make and bake) and they are super delicious. I am so glad I tried them. Thanks so much for the recipe!!
ReplyDeleteYou're so welcome! Glad you liked them. Now I want some ;)
DeleteI did only make half a recipe (to clarify for the really quick time)
ReplyDeleteI Put the dough in the fridge because was way too sticky to handle. Hopefully that helps
ReplyDeleteJust made these. They were so super easy and QUICK!! I really dislike peanut butter, but my family loves it and though these are still quiet warm, I have noticed few missing... and there goes another one!!!!
ReplyDeleteHa ha! That's great. It feels good when they eat what you make, doesn't it? :)
DeleteBest peanut butter cookie recipe i've found! They were chewy and tasted great! Also I did press them in the middle before i baked them and used crunchy pb instead of smooth, and mine made 23 cookies.
ReplyDeleteI made these yesterday, this is my second time making these (made and posted on February 23rd). I made them this time with my 3 year old niece. Again REALLY quick and easy enough for 3 year old hands:)!! We added chocolate chips to them and I am told that they were really good (still don't like PB - I did try one though, but nothing to compare it to as I have NEVER had a PB cookie before!!) I am on my to the kitchen to make some more!! Thank you so much for sharing this recipe, it has been added to my "go to cookies" recipes :)
ReplyDeleteExcellent! I'm happy to hear you're loving this recipe so much.
DeleteI would bake a batch right now if I weren't busy
ReplyDeleteThese are amazing. Best peanut butter cookies ever. I'm a cookie snob and this is now my go to peanut butter recipe. Simply amazing!
