You certainly could in the filling. But I'm not so sure the crumble topping would turn out quite the same if you used honey instead of brown sugar. Let me know how it goes if you try substituting. I love hearing about what other people do with my recipes!

That looks *so* delicious! I can only think of things like "dip and veggies" or "salsa and chips" but those are obvious because you're primarily eating the veggies or chips!

My 13 yr old boy commented Saturday that he wanted a plum crisp so guess what he made. Plum Rhubarb crisp. Pink and yummy. We had visitors and went for a walk between dinner and dessert but when we got to the other end of the island I remembered that I'd left the crisp in the oven. Had to crash a friend's birthday to use their phone and get a neighbour to go and turn off the oven and save the crisp. I guess we owe her one too! Yep not rhubarb plum. or dip and chips. hmm. enjoy the lovely sun.
