INGREDIENTS:
1 cup whole wheat flour
1 cup milk
1 egg
1 banana, mashed
1 tsp cinnamon
Add your flour to a large mixing bowl. If you don't have whole wheat flour, all-purpose works nicely too...
Then add your cinnamon to the bowl. A little ground nutmeg is also a good addition to these lovelies...
Next, pour the milk into the flour mixture...
Crack your egg into the bowl now. I like free range eggs because of their rich taste and bright orange yolks...
Whisk your batter together until those pesky little lumps go away. Then add the mashed banana and whisk again until evenly blended...
The cooking part:
Your frying pan should be at a medium heat before you start. I like to use a non-stick pan, but sometimes it's in the dishwasher so I'll grab our stainless steel one and fwazz it with some non-stick cooking spray. Pour the batter into the pan and cook until the edges loose their shine. Flip and cook on the second side until you think they're done. Both sides should be golden brown.
I like my pancakes with a dollop of plain yogurt on top. But my 3-year-old son loves to dip his in classic maple syrup...
And that's it! Now if someone can explain to me why the first pancake never turns out...

ReplyDeleteI made these sunday morning for me and my husband, they were very yummy, i added a few dark chocolate chips too. I am sure my LO will love them once he gets bigger.
ReplyDeleteI wonder, can you use frozen bananas? We ALWAYS have those around... but I've only ever used them for smoothies or banana bread. Thoughts???

Lisa B - Maybe that would work. You'd have to thaw the bananas first and mash them, though. If you used frozen banana in pancakes the batter around the frozen chunks wouldn't cook as well as the rest of the pancake, as pancakes cook pretty quickly. Let me know how it goes if you try it!
